It's time to make a resolution to calm down your stress and relieve your anxiety. 2020 has been a tough one, but let's start off the new year right. Our Re-Leaf is here to relax and refresh the mind, body and spirit to help promote positivity for 2021. Its warm flavors synergistically blend beautifully into this winter carrot soup.
Spiced Roasted Carrot Soup
6 to 8 large carrots
One inch of fresh ginger
1 small yellow onion
1 garlic gloves
6 cups vegetable stock
1 1/4 cup of canned coconut milk
1 Re-Leaf tonic
Pre-heat oven to 375°F degree
Peel carrots and cut into smaller pieces.
Place carrots on a baking sheet.
Season with salt and pepper and drizzle lightly with olive oil.
Toss to combine.
Place in oven for about 20 minutes
Shaking pan every so often for even cooking
Remove from oven when soft, slightly brown and caramelized.
Bring stock to a boil in a large saucepan with garlic, ginger and onion.
Bring down to a simmer and cook for five minutes until onions are soft.
Stir in the coconut milk to the soup (leave a little bit behind for garnish)
Transfer mixture to a blender
Add the roasted carrots and Re-leaf.
Puree the soup until smooth.
Garnish with some extra coconut milk.
Serve with gluten-free sourdough and avocado.
